晾干,一只处理干净的鸭子,清水洗净,放在烤架上晾干水分,里外干燥。约需2,3小时。

鸭子内部腌制,鸭子表皮晾干后,用约10g左右的混合香料,含十三香(或者五香粉)+盐,混在一起。(我用的喜马拉雅粉盐所以盐有点粉色)
