平时人们做大白菜,有时用热水烫,有时不烫。研究者发现,烹饪大白菜时,用开水焯一下,对保护其中的维生素C很有好处。如果是用热水烫,更好是用开水。因为,大白菜通过加热,可产生一种氧化酶,它对维生素C有很强的破坏作用。这种氧化酶在温度65℃时活动力更强,而在85℃时就被破坏了。所以,用热水烫大白菜,一定要用沸水,不能用温水,只有这样才能保护大白菜中的维生素C不被破坏。大白菜中的维生素C是相对稳定的,但是,熬白菜也不要时间过长,醋可以晚些放。
